Have you ever had gnocchi? For some reason it seems to be a rather uncommon food. It’s not on many restaurant menus, some grocery stores don’t even sell it, and most people don’t know how it’s pronounced. Not even dictionaries can agree on how to pronounce it. Cambridge says “NO-key”, while Merriam Webster say “NAH-key”, and the Italian pronunciation is “NYAH-key”. Regardless of how you say it, one thing is for sure — it’s delicious! I’m not sure why these potato dumplings of deliciousness have not caught on in popularity. But if more people gave this recipe a try, I’m sure everyone would be clamoring for more gnocchi!
This One-Pan Gnocchi with Sausage and Spinach is fantastic! I’m a big fan of one-pan recipes, because doing dishes is my LEAST favorite chore ever! This comes together quickly and easily, all in one pan. Plus, this is a meal all on its own, with no need for a side dish, except maybe some bread to sop up the yummy sauce. From pantry to table, this recipe only took about 20 minutes! That’s crazy!
So we’ve mentioned that this is easy, quick, and only dirties 1 dish, which is awesome. But how does it taste? Oh man…y’all this was so, so good. The sausage gives so much savory flavor with just a little kick, while the gnocchi, spinach, and tomatoes provide that classic Italian flair. And of course, the crowning glory of any Italian dish is the cheese, making it creamy and rich. This is one we’ll be making over and over again!
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 lb ground Italian sausage
- 1 (16 oz) package dry potato gnocchi (found in pasta aisle)
- 1 (14.5 oz) can Italian flavored diced tomatoes with juices (do not drain)
- ¼ cup low sodium chicken broth
- 4 cups fresh baby spinach leaves
- ¼ tsp freshly ground black pepper
- ½ cup shredded mozzarella cheese
- ½ cup freshly shredded Parmesan cheese
Directions
- In a large nonstick skillet, add oil and heat over medium high until hot. Add onion and garlic and stir/cook until fragrant, 30 seconds.
- Add sausage, breaking it up into pieces, until nicely browned. Don't drain. Add uncooked gnocchi. Stir 1 min, gently breaking up any clumps. Stir in tomatoes with juices and chicken broth. Cover and cook on medium heat, 5 min, or just until gnocchi is fluffy and cooked through. Turn off heat.
- Add spinach and pepper. Stir until spinach leaves are wilted. Sprinkle with cheeses and cover for 3-5 minutes or until cheese is melted.
Notes
To make this meal vegetarian, you can leave out the sausage entirely (maybe try replacing it with a vegetable, like zucchini?) and sub the chicken broth with vegetable broth.
